Skip's (heart attack) Potatoes' - Skin on red potatoes with butter, butter and more butter! Chive, parsley and bacon if you want it. Tastes just like a loaded baked potato - you gotta have it!
Jalapeno Cream Corn - A southwest classic except we use cream cheese and Eagle Brand™ milk.
Skillet Rice - Brown rice fired with bacon, butter, onion and the secret ingredient brings it all together.
Jalapeno Cheese Grits - A southern staple - grits - done Texas style.
Three Cheese Macaroni - Creamy and delicious! Cheddar, American and Gruyere cheeses combined to make this classic special.
Green Beans - Thick cut sauteed with bacon, onion and mushrooms.
Mushrooms - Sauteed in port wine sauce with caramelized onions. Try it with the tenderloin!

HERE'S THE BEEF
Smoked Tenderloin - Prime tenderloin beef trimmed of all fat and rolled in special spices. Seared on a hot pecan wood fire and smoked to perfection. Individual carved on your buffet live! Gotta try it!
Bone in Prime Rib - We can smoke it just like the tenderloin, make steaks or chicken fry it! When we chicken fry it we slice it to order; batter it in milk, eggs, beer and flour and flash fry it right in front of your eyes. Served directly from the fry pan.
Quail - (no, it's not all beef) Marinated in garlic and herb. Split breast semi-boneless grilled or fired.
Chicken Breast - Grilled and topped with tomato pesto and feta cheese. Smoked to melt it all together. We can do it without the fancy topping as well.
Lobster - Grilled and served with garlic butter - a new twist on an old favorite.
Smoked Chicken, Ribs, Brisket and Pork Shoulder - Your choice seasoned and smoked with pecan wood for a sweet flavor. We can also do whole hog!

DESSERTS
Cobbler is our specialty, any kind! Pecan, apple, peach, cherry they are all great! Try them with Blue Bell™ vanilla (yes, sometimes we cheat), it's great!

Prices are individual based on what you want and where you want it! Call and we can prepare a written menu and pricing especially for you. We can serve as few as 50 in an intimate setting or as many as 1000 in a group setting. We look forward to making your next party a success!
